Who remembers their Mum or Aunt’s making rum balls as a kid?? I certainly do, it’s a taste that is unforgettable. I hadn’t eaten it years as my Mum lost her special recipe when we moved house.
It wasn’t until this Christmas when a girl from work surprised me with some gluten free rum balls. They were so amazing that I requested the recipe and went home that night and made some for my family. This easy gluten free recipe was just too good to not put up on my blog. ENJOY!
Ingredients
1 & ½ packs of rice cookies, crushed
1 tin condensed milk, 395g
1 cup fine desiccated coconut for mixture (have approximately ½ cup extra to coat)
¼ cup cocoa
2 tablespoons of rum, or to taste
Method
1. Combine all ingredients in a bowl with a wooden spoon.
2. With wet hands roll the combined mixture into small balls.
3. Coat with coconut.
4. Place coated balls on a tray and refrigerate for 30 minutes or until set.
