Fun exciting tasty gluten free food
Let’s take a trip down my heritage lane and introduce you to a vegetable that my grandparents still grow in their backyard today. The one and only Piperka (pepper).
I will post a few recipes that incorporate the piperka but let’s start off with an old school classic Macedonian spread.
For the last 25 years I have been stuffing my face in it. Thought it was too tasty to be easy, however, recently I found out through my mum and Baba (grandma) just how easy it is to make.
10 piperka (peppers) (Mixture of red and green is best), chopped (the finer you chop the easier it is to spread, however I prefer the piperka chunky)
1 can of 410g tomato puree (or freshly squeezed tomatoes)
1. In a frying pan heat 1 tablespoon of oil over a medium- high heat and then add the piperka.
2. Once the piperka is cooked add the tomato puree and 410g of water (I just use the empty tin and fill with water ). Stir and let simmer. Enjoy!
Some people like to add garlic and salt but I don’t think its required.
I like to spread it on some gluten free toast on a cold winters night curled up on the couch while watching gossip girl xoxo 😉
